Vinification: Grapes without stems are put to macerate in special containers in which at regular intervals the cap is punched down to allow a greater of dye, tannic and aromatic stuffs. The time of maceration is extended beyond the alcoholic fermentation; the wine is separated from the wine lees and it is initiated the malolactic fermentation.

Wine aging and maturing: At the end of the malolactic fermentation, the wine is decanted and let to mature 5-6 months. Later it is stabilized, filtered and bottled.
