Description
-
This wine has an intense, garnetish red ruby colour. This is obtained from Sangiovese Grosso grapes, which in Montalcino are called Brunello. The grapes are selected and exclusively harvested by hand, then these are carried in the winery where are immediately stemmed and started to the fermentation. The alcoholic fermentation goes on for about 15 days after the harvest, then follows the peel soaking: this permits the extraction of the tannins and the phenols in a controlled way. This determines the structure and the Brunelloís duration in time (it can obviously change depending to the yelding year). Aged for two years into big barrels of Slavonian oak, after the bottling, the wine refines in bottle for at least 6 months before being placed in the market. Both the refining time and the ageing time can change from year to year. Tthanks to this operation we can exalt all the qualities that the various yelding has offered us. The taste is warm and with great harmony, the body is full and with a long persistence. This wine has some undergrowth and small fruits flavours; inkling to caramel and spices. It is matched with savoury dishes, roast red meats and games, seasoned and savoury cheeses.
