  • Description: Deep ruby red wine with a purplish hue. Intense, persistent and well-balanced bouquet with spicy and fruited notes of vanilla and licorice. Bodied, balanced and mellow taste with elegant and mature tannins. To serve at 18° C and match tasty and grilled red meat.

  • Growing area: Vigneti del Foggiano

  • Production: 3,000 per hectare

  • Yield grape in wine: 70%

  • Harvest: End of September / beginning of October

  • Alcoholic fermentation: Inside stainless steel, temp. 22°C for 16 days

  • Malolactic fermentation: Entire carried out

  • Vinification: Maceration on the peels 16 /18 days with follature and delastage and 10% salasso

  • Aging: In barrique Never, Allier, Tronçais for 10 months, then in bottle for 3 months

  • Grapes and vineyards: Troia is among the oldest and the most typical grapes planted in northern and central Apulia. It might come from Asia Minor (Troia) and then have arrived in Apulia during the Greek colonization; or its name might simply be derived from an Apulian town's name in Foggia area

  • Vinification: The grapes are destemmed, pressed and after the selected yeasts inoculation, they undergo a fermentation at low temperature (23° C). The must, in contact with the cap, undergoes a long maceration with regular pumping over and delestage in order to better extract the color. Color extraction is also better improved by bleeding technique
